In Fezzano, Liguria you can choose a simple sailing course on a cabin cruiser/keel boat or a much more engaging navigation. 
In Porto Pollo, Sardinia you can find many courses on dinghy or cabin cruiser/keel boat, residential or itinerant ones. 
In Dervio, Lake Como you can attend a course on a keel boat or dinghy to learn and improve your sailing skills, besides other options to spend a day or a weekend.
Lessons are given with high attention to experience and technique; the main goal is to sail as much as possible, the theory part will be fast and clear. 
At our Porto Pollo camp, besides sailing courses on dinghy or cabin cruiser, you can also attend Windsurfing and Kitesurfing courses.
